Ingredients :
1kg of deer shoulder
500g pork belly
Cook in a broth of carrots, leeks, onions, bay leaves, cloves, juniper berries for 1h30.
Chop well, mix with fresh parsley, add 10 cl of white wine, 2 eggs to this stuffing.
Spread on a noodle dough, roll up well and cut into slices.
Roast on each side.
Serve with green salad and/or raw vegetables.
