Cold melon, tomato and Nordic shrimp soup recipe

Need freshness? This dish is what you need! An incredibly simple cold soup with tomatoes and melon. An express garnish of creamy and fragrant northern shrimp. A finish of tart melons as a garnish. Whether you savor this soup as a starter or main course, the charm will operate!

Ingredients

Pickled melon

½ cup (125 mL) orange-fleshed melon (cantaloupe type), cut into small cubes

2 tbsp. (30 ml) honey

2 tbsp. (30 ml) cider vinegar

2 tbsp. (30ml) water

Soup

4 cups (1 litre) fresh medium tomatoes, quartered

2 cups (500 mL) orange-fleshed melon

1 C. (15 ml) verjuice

1 C. 1 tbsp (15 ml) camelina oil

Salt to taste

Accompaniement

1 lb (450 g) northern shrimp

2 tbsp. (30 ml) plain yogurt

2 tbsp. (30 ml) mayonnaise

1 French shallot, chopped

1 C. (5 ml) hot sauce

2 green onions, minced

Preparation

The day before or the same morning (if you are making this recipe in the evening), prepare the pickles melon by boiling the honey, vinegar and water and pouring the hot marinade over the melon cubes in a heatproof container. Refrigerate until ready to serve. Place all the soup ingredients in a blender or food processor and blend until the texture is smooth. Book cool. For the filling, combine all the ingredients (except the green onions) in a bowl. Adjust the seasoning if necessary. Keep in cool until serving. When ready to serve, divide the soup between bowls and add the shrimp garnish in the center. Finish the assembly with the green onions, the marinated melon cubes and a drizzle of oil.

A few minor variations…

This recipe offers many possibilities for variations. For example, it is possible to replace the orange muskmelon with watermelon or even strawberries. The shrimp garnish can be swapped for hard-boiled eggs and a little cream cheese. As for decoration, have fun with the herbs you have!
