In 2014, Benoit Aymard took over part of the old family estate in Cahors, with Malbec vines planted by his grandfather.
There he began a conversion to organic, with a desire to return to peasant agriculture and produce real local wines.
The Les Polissons cuvée is his wine of friends: matured in stainless steel vats, it emphasizes fruit and freshness. It has an intense color, typical of Malbec, and a nose full of fruit, with some floral notes and an animal touch. A fresh acidity gives it radiance and vitality on the palate, light tannins bring just the right amount of relief, and a delicate mineral impression stretches the finish.
Serve slightly chilled with charcuterie, shepherd’s pie with duck confit, steak and fries.
