PEACH CHICKEN
The sweetness and tartness of the peach will enhance the poultry. A sweet / savory recipe to try absolutely! A recipe to enjoy hot or cold accompanied by tomatoes with peaches.
Peaches can be replaced with pears or mango.
The chicken can be replaced with another poultry.
Per person :
1 chicken breast
1 tsp red wine vinegar
Salt and pepper
2 peaches (vine or flat if possible), peeled and cut into pieces
In a casserole, put the vinegar and 1 peach. Place the chicken on top, add water to cover, cover and cook for 20 mins while watching that there is still liquid (if necessary add a little hot water). Take out the chicken. Crush the peaches or blend and cut the chicken into thin strips. Place on a dish or plate surround with sauce and distribute the second peach all around.
