Chicken tagine with dried fruits and prunes

In Saint-Perdon “Chez Mama” you can order tajines, couscous and Moroccan pastries. A real traditional Moroccan cuisine to take away to enjoy with friends and family.
For Circuit Bleu on the Saveurs side of France Bleu Gascogne, Mama chose the tajine. Sweet/salty chicken tajine with dates, raisins, apricots, prunes, caramelized onions and honey. A simple recipe that is easily accessible to everyone. A colorful tagine with many spices: cardamom, cinnamon, cloves, peppercorns, turmeric, chilli, curry and fresh ginger.
To accompany this dish Mama offers us her recipe for the traditional moroccan bread. A bread to break with the hands as the chef explains it to us, it is the tradition! Follow these two recipes while re-listening to the program of the day.

Whether it’s the tajine that you will present in a terracotta dish or bread, you will have to cook the day before your meal. The chicken needs to marinate and the bread to rise for at least twelve hours.
