There is movement in the Place Gare Viger sector, where a major revitalization project is underway. In addition to rental condo towers and new office space, the new Hyatt Centric Ville-Marie hotel has recently grown there. Opened in November, the place is home to the Cartier Arms restaurant, designed by Gauley Brothers, inspired by modern London private clubs and late 19th century Canadian railway hotels.e century.
To carry out the place, which wants to be anchored in local Montreal culture, the real estate developer Groupe Jesta called on experienced restaurateurs: the Burgundy Lion group, known for their eponymous pub, but also for Bishop & Bagg and Wolf and Workman. Even though it is located in a hotel, Cartiers Arms wants to be a real “neighborhood restaurant”.
As an aperitif, pm winks at the historic site, with a menu focused on martinis. You can even create your own cocktail, thanks to a range of choices of gins, vodkas and vermouths. For the digestive, we offer a whiskey made by Toby Lyle, founder and co-owner of the Burgundy Lion group and whiskey sommelier, with Marker’s Mark.
On the food side, executive chef Marco Santos offers cuisine that fuses British and Quebec influences, with an emphasis on local sourcing and local producers. “We want to introduce tourists to all that is good and good locally,” says Mr. Lyle. Think beef carpaccio, lamb kebab, smash burger, steak frites, Beaurivage pork chop with buttered cabbage and mustard sauce, sticky toffee puding for dessert and, a quintessential British specialty, a beefy brunch menu.
