Now that the terrace season is over (it has been extended more than elsewhere in Alma, thanks to curtains and heaters), the 18-seat microrestaurant in Outremont is switching to a new winter formula.
It will now be necessary to “surrender” to the carte blanche menu of the kitchen. This evolving one will allow you to taste what would once have represented almost the entire menu.
There will be six courses, some of which include more than one course, and dessert. You will have to pay $ 89 per person, plus taxes and tip, upon reservation. The wine will be chosen on the spot, whether ordered by the bottle or by the glass, with thoughtful or spontaneous accords, offered by voice.
Reservations not honored (no shows) have become an even greater scourge for restaurants in recent months, says Alma co-owner Lindsay Brennan, who has nonetheless always managed to fill her restaurants, even having to turn away customers, sometimes, but at the cost of a some stress.
This new way of operating, in two services (6 p.m. and 8:45 p.m.) per evening, will make it possible to better manage purchases and avoid losses, both in the kitchen and in the cellar.
With its second casual and reservation-free table (except for groups) at the neighboring address, the Tinc Set, Lindsay and her partner, Juan Lopez, chef at both tables, felt they could afford to explore a more “Experiential” at Alma.
The whole team will then take a break over the holidays and throughout January, returning in February with fresh ideas and a new “carte blanche”, if it has proven its worth.
