Carnival donuts a nice tradition easy to cook

“Carnival” … The period without meat

A period “carna valé” in Italian, which means “without meat”. Among the many traditions of Mardi Gras, the kitchen takes a good place and it is normal since we finished the milk, the cream, the eggs that we had on hand before depriving ourselves of them for 40 days. And depriving yourself of sex too, but that’s another subject.

With milk, butter and eggs, we made pancakes and the tradition has remained, you may make them at home. In many regions, in Lorraine in particular, there is also a tradition of carnival donuts.

Here is our recipe:

You need

  • 1 kg of flour
  • 4 eggs
  • 120 grams of butter
  • 120 grams of sugar
  • 40 grams of baker’s yeast
  • 1 pinch of salt
  • 1 glass of milk,
  • 1 lemon zest

And some add a little cinnamon, it’s up to you.

How do we do ?

  1. You first mix the flour, baking powder, sugar, salt and butter in a bowl
  2. Then you add the eggs that you have beaten beforehand, and you continue to knead what becomes a fairly homogeneous dough as you knead it.
  3. When it is very smooth, you make a ball of it and this ball you cover it, for example with a towel and let you rest. One hour is the minimum
  4. To make the donuts you flour the work surface well, you spread the dough to a thickness of half a centimeter, you cut out diamonds and you make an incision in these diamonds and then you turn over a corner of the dough in the hole formed through the incision.
  5. You then fry them in oil, when they come up, turn them over so that they brown all over and presto! you put them aside.
  6. When it’s cold, a little powdered sugar and you can taste and even offer because it’s one of the pleasures of carnival donuts to offer them.

And that’s normal… Whatever the ingredients, cooking is also a lot of heart!
