In Montreuil (Seine-Saint-Denis), a company produces six tonnes of it per year, in just 300 m2. Everything is grown without pesticides or GMOs. Water is recycled and energy is saved as much as possible. “We mainly work on varieties that grow very quickly and require very little light to grow.“, explains Xinhui Xu, co-founder of Hydropousse.

Their plants are illuminated with violet light, which consumes little energy. Harvested every ten or twenty days, the micro-shoots offer a high yield. In addition, they have more virtues than fruits and vegetables. They are particularly rich in nutrients. Ultimately, they could contribute to a better diet. The chefs of starred restaurants have already taken hold of these microgreens.
