Butter shortage: the concern of bakers

Bakers are seriously worried about their galettes des rois. Faced with soaring butter prices, caused by a shortage, some fear having to increase their prices to the point of sometimes doubling them.

Reindeer (Ille-et-Vilaine), a bakery is renowned for making the best galettes des rois in the department. Unfortunately, the shortage of butter is forcing bakers to change their recipe. “Our big problem at the moment is first of all the butter that we want to have (…) then to have a butter that does not flare up in terms of pricing”, explains Christophe, one of them. The situation is difficult for the business, which needs 700 kilos of butter for the production of its pastries every morning.

Faced with this situation, bakers find themselves obliged to find solutions, and to rely on less qualitative products, but available in large quantities and at lower prices. This shortage follows strong demand for butter in France and internationally, as the end of the year holidays approach. On farms, milk collections are also on the decline. “It is certain that if there is less production, less breeding and if it continues in this direction, we will see more and more shortages of butter and other raw materials”, laments a farmer.
