Brûlé, the new Toulouse coffee shop surfing on the vegan wave

Attention foodies! A new place has just opened in the center of Toulouse. Since March 2, burnt, this is the name of this coffee shop, is open at 12 rue Alexandre Fourtanier, next to Place Saint-Georges, where there used to be a bakery. With a particularity. It’s a 100% vegan coffee shop opened by two friends from the region, Edith Lafargue who decided to leave the world of advertising and Anaelle Laugenie, a trained pastry chef. Presentation.

Edith Lafargue, “Brûlé” is not the first coffee shop or the first vegan grocery store in Toulouse. Because you also have a small grocery store. Is there growing demand?

Yes. In fact, we had this project in mind for a few years already with my partner Anaëlle. Even if at the start the project started out as a joke. We were both in Paris and we wanted to come back to Toulouse because we are both from the region. And we clearly think that there is an increasingly strong demand in Toulouse, but not only. People increasingly want to consume plants, to consume ethically. And so we thought there was a little niche to play on that. With great pastries, weekend brunches, it was like us. So we started.

Vegan, we talk a lot about it. But there are vegetarian and vegan. Maybe we can re-explain the difference in a few words?

Vegetarian is people who do not eat animals. So no meat, no fish. And vegans are people who still don’t eat animals, but they don’t eat animal products either. So no milk, no egg and no honey.

Did you mention pastries? There is not just that. It’s a coffee shop. There are drinks. And we can also come and eat lunch?

Absolutely. We have a savory offer, a snack for lunch. So dishes that we try to change regularly. And on weekends, we offer brunches. Here is for the most greedy. And all week, we have good coffee. Moreover, we work with a Toulouse roaster called Hayuco.

What gives us the most pleasure is when people come, taste something and say to us: “It was super good! Ah, is it vegan? We didn’t know. It doesn’t matter. We’ll be back” .

Is there a growing vegan community in Toulouse and the region?

Yes Yes Yes. Afterwards, I’m not sure that our core target is vegans. People come and come back. And that is really too cool. But, in fact, what we want to prove with Anaëlle is that vegetable food can be greedy. And so, we just want to convince everyone a little. What gives us the most pleasure is when people come to the café, taste something and say to us: “It was super good! Ah, is it vegan? We didn’t know. It doesn’t matter. We will come back”.

To speak only of pastries, we have a chocolate brownie, peanuts, chocolate puffed rice. And there, we just launched a new cookie and cream cheesecake with Oreos and lots of gourmet things. There.
