There are books about Japanese sake that are very interesting and for everyone. For novices as well as for initiates, for foodies and scientists. Chloé Cazaux Grandpierre sake sommelier advises you on a few books, to be found in the many bookstores in Nouvelle Aquitaine. So here are two books.
The sake bible: Nihonshu, Japanese sake by Gautier Roussille
It was my first book… and it was by reading the first lines of Gautier Roussille that I understood that Japanese sake was much more than just “rice alcohol”. Trained as an oenologist, we find all the technicality of his training in this incredible book which is a mine of information. My first reading was a little complicated despite my knowledge of oenology, but with time, experience, I realize that this is not a book but a sake bible. You have to hang on if you are not a technician, but what a joy to immerse yourself in such a precise text. I recommend it for all those who have a basics in oenology and / or who already know Japanese sake and who therefore want to learn more about its manufacturing methods, the origin of the rice, its history, the yeasts …
A book that makes your mouth water: Tendance Saké, surprising recipes from Lobna Liverneaux
Lobna Liverneaux is a sommelier sake but also chef and Maître Tofu. She invented the concept of emotional cooking and what I can tell you is that you will have some emotion when you taste her book which she just released in October 2021! I was one of the first to have it in my hands… And I find that there was a lack, in France, of a beautiful cookbook on the Nihonshu with photos that make you want to: here it is! Prepare to have your stomach rumbling because it is a journey that awaits you with masterful recipes and unusual pairings.
