Pioneers of organic and biodynamic farming in the Jura, Bénédicte and Stéphane Tissot produce a dizzying number of cuvées from around forty hectares, but all with the same immense care: authentic, singular and very touching wines.
Their latest Crémant rosé (disgorged in June 2022) is particularly successful. Blend of Pinot Noir, Poulsard and Trousseau, partially matured in barrels, it presents a deep color. Its very pretty nose, more marked by autolysis than the previous ones, offers delicate aromas of brioche, almond and pastry cream which are added to those of strawberries and currants. The palate is rich, with substance, but also light and full of vitality.
Very harmonious, it stretches on a long finish where a mineral impression emerges. Try it with grilled salmon, tuna tataki, roast quail, or even duck breast with cherries.
