In this German region, many traditions come together because of music, dance, singing or even cooking. Focus on Bavaria, which has not yet revealed all its secrets.

In one of the valleys of Bavaria, a group of alphorns can be heard playing a tune. “With the muscles of the stomach and lips, you produce different sounds, all starting from the abdomen”, explains an instrumentalist, formerly a trumpeter in a symphony orchestra, who now transmits her passion through the teaching of this typically Bavarian instrument. “It’s important for me to take part in this”, says a student. Until the beginning of the 20th century, the alphorn was an indispensable means of communication for the inhabitants of Bavaria.

Those with a sweet tooth can also discover Bavarian specialties such as crispy pork knuckle. “We have spices, a mixture of cumin, salt, pepper and garlic, and we coat generously”, declares a chef before placing the shank in the oven for two hours, steaming first, then grilling, to melt the fat, and give the skin the crunchy appearance so much sought after.
