Autumn truffle from Champagne Ardenne

Black, white, summer … and autumn!

When we talk about truffles, the one that comes to mind is the black truffle, the most famous and the most appreciated. But do you know the autumn truffle found in Champagne-Ardenne? The color of the autumn truffle oscillates between black and grayish, and its interior varies from light yellow to various shades of brown. But other characteristics distinguish it: its aroma and flavor are intense. On the palate, the autumn truffle is reminiscent of porcini mushrooms, hazelnuts, butter and spices. This precious mushroom is a perfect addition in the kitchen, especially if it is processed fresh. It goes perfectly with meat, fish, pasta, risottos and vegetables or to flavor many other dishes.

A market to learn to know and appreciate

This Saturday, November 20, meet at the cloister of the Saint-Remi museum, for the 9th autumn truffle market in Champagne-Ardenne. An event organized by the Marne association of truffle producers. On the program: conferences, demonstrations of truffle dogs and the sale of truffles and other short-circuit products.
