Thierry Doulmet and his son Rémy work the vines and the wines in a special way, with as few interventions as possible. Long-term work, undertaken several decades ago, which gives a unique character to the different cuvées, and respects strong commitments.

Working the soil and the wine in organic farming is a committed approach. Specific constraints weigh at each stage of the wine-making process. Nature, or natural, methods are even more demanding: winegrowers have no room for error, since they treat their vines very little. A strong choice that implies a very high degree of rigor. Thierry Doulmet has been growing his vines for several decades, around Alba-la-Romaine in the Ardèche, with the aim of enabling the plants to defend themselves naturally against the various hazards that threaten them. Long-term work that bears fruit, and allows the natural qualities of the vines and the grapes to express themselves. The winemaker uses little or no sulfur or copper, and prefers to use decoctions of plants and essential oils. He makes sure to respect the energies.
