Asparagus can sing in the pots of the Cercle, Opéra de Saint-Etienne

White, green or purple, asparagus is the essential delicacy of spring.

Present on our markets from March to June, asparagus is excellent for health: it is rich in fibre, vitamins (A, B9, C and E) and potassium.

Freshly distinguished by the label “Maitre Restaurateur”, the team of Circlethe restaurant of the Opéra de Saint-Etienne, makes it a point of honor to prepare and offer beautiful and good dishes, from local production and respecting the seasons.

Béatrice Perrin and Nourredine Hamache in the kitchen, Ludovic Métais in the dining room, present the asparagus as a starter, served as simply as possible: lukewarm, accompanied by a mousseline or a vinaigrette with hazelnut oil. A delight!
