A Sunday in Louhossoa

Located a little over twenty kilometers from Bayonne Louhossoa is a Labourdin village which is located between Itxassou and Bidarray. It is nestled between the Ursuya and Baigura mountains. For this new episode of “A Sunday at…” we arranged to meet several Luhusoar around a coffee at the Trinquet hotel restaurant, at Daniel Bidart’s. Around the table, Natascha Rossner, a German who came to live 15 years ago in Louhossoa, Mathieu Memberde, a child from the village and co-manager of the Abilan company, Katty Biscay, a member of the Petit Théâtre de Pain campaign and finally Daniel Bidart, owner of the Trinquet.

The Trinquet hotel-restaurant

It is the only restaurant in the village, it is managed by Daniel Bidart who has been working there for 40 years because before him this place belonged to his parents. It is Daniel himself who is in the kitchen and he makes it a point of honor that his cooking is “homemade”. To do this, he himself takes care of killing the pig or even slaughtering the ducks, but also making his own jams; his goal is to do as his parents once did so that his cuisine is of the best possible quality. In addition to the hotel and restaurant business, Daniel Bidart also owns a trinquet adjoining his establishment and anyone who would like to play pelota is welcome in this trinquet.

Abilan

A carpentry company that cares about a job well done, Abilan is a company co-managed by two children from Louhossoa: Mathieu Memberde and Hervé Mongabure. When the company was created, the two partners were keen to financially revitalize the Louhossoa sector but also to employ local workers. A successful bet because today Abilan has 25 people in its workforce and offers its services throughout the Northern Basque Country but also in the southern Landes. A company full of strong values that appear in the name of the company because Abilan is a double play on words: A Bi Lan, the work of two (the duo of associates when they started in a small garage) but also Abila and Lan: smart work.
