In a public garden near Toulon (Var), perfectly ripened oranges are sometimes given to visitors, but are most often lost. “We dumped it and turned it into compost”, explains Nans Fabre, gardener at the remarkable Baudouvin garden. But the garden has decided to promote its production. Julie Hermet, from the Économe association, has created a solidarity cannery, against food waste. She also collects unsold fruits and vegetables from the markets.

An association specializing in small quantities

As soon as the fruits are collected, they are processed using the mobile cannery. The association specializes in small quantities which are not of interest to industrial canneries. The jam is then potted to prolong its conservation. Some of the jams and preserves are sold in a network of grocery stores. Part of the canned goods also goes to the producers and gardens who supplied the fruits and vegetables.
