Marilyn Ouellet, from the Ferme du Coq à l’âne, in Bury, in the Eastern Townships, has decided to offer only her organic baskets in winter and to abandon farming in the fields in summer. The company has four greenhouses heated with biomass, where it grows about twenty varieties of vegetables on the ground.
