D-1 before Christmas Eve, and you are still looking for that rare gem for your dessert? Here is a recipe that may convince you and delight the taste buds of your guests.
Ingredients for 8 people:
25 cl of whole cream ¦ 2 sheets of gelatin ¦ 3 egg whites ¦ 50 g of sugar ¦ 500 g of chestnut cream ¦ 24 cookies with a spoon ¦ A few candied chestnuts.
THE STEPS TO FOLLOW
v Place the whipping cream in the freezer for 20 minutes.
v Place the gelatin leaves in a bowl of cold water to soften them.
v Whip the egg whites until stiff.
v Whip the very cold cream into whipped cream and add the sugar.
v Pour 2 tablespoons of water into a small saucepan and melt the gelatin over low heat, stirring with a wooden spoon.
v Mix with the chestnut cream, then gently fold in the whipped cream and finally the white snow.
v Line a cake mold with cling film, arrange the biscuits with a spoon on the sides then pour a layer of mousse. Then, make a layer of cookies and repeat the operation, ending with cookies.
v Place in the refrigerator for at least 4 hours.
v When ready to serve, delicately unmold the log, then decorate with candied chestnuts.
