The vineyards of the youngest (1981) of the great Champagne houses are organically farmed, but Alice Paillard does not officially claim this. Low in sugar, this rosé “Première cuvée” is based on a blend of several vintages dating back to 1985. Very fine bubbles and abundant foaming. Well scented with notes of currant, raspberry and a floral touch of the most beautiful effect. It’s ample and caressing with vibrant acidity. Long airy finish with bitters that bring a certain elegance. A wine of pure pleasure which will do wonders as an aperitif and which can then be finished at the table. The wine also gains in volume and complexity with aeration and as it rises in temperature. Not given, of course, but we play in the big leagues. And your mom definitely deserves it!
