How to deal with the mustard shortage? In Eure-et-Loir, an artisanal manufacturer has increased the pace in order to meet a much greater demand. It offers 100% local production. For seven years, the seeds have been grown on site.

End of harvest for mustard fields in Digny (Eure-et-Loir). In this time of scarcitylocal production is precious for these seeds that have become gold. The demand for mustard having exploded, the farmer had to increase his production. “We had to produce a little more than double”says François Lorin, mustard producer clarance. 90% of seeds in France come from Canada and Ukraine. The drought and the war put a stop to these imports.

Farmers had abandoned this crop in favor of rapeseed and wheat, which were more profitable. Seven years ago, François Lorin wanted to relaunch this production. With the demand, we had to increase the pace. 100,000 pots will be sold this year. In store, a quota has been imposed in order to serve everyone. The company supplies 500 producer shops, butchers and cheese shops. French mustard production barely covers a third of national needs.
