At 31, Ladis Olaizola continues a family tradition that is well established in Urrugne. At the head of the Hirigoinborda farm, the young breeder is the fourth generation to work on these lands. With the same love for animals, nature and good products.
By taking over, Ladis replaced dairy cows with goats. 160 animals which provide the milk necessary for the production of goat cheese, according to the seasons. Because Ladis Olaizola knows how to put his profession at the service of his animals. The goats take advantage of nature, eat the grass they find on family lands and take advantage of the Basque mildness and its ocean spray. This gives the particular characteristics to its logs, dung and other briquettes.
In the family tradition, trained by a colleague from Bigourdane in Ossun, Ladis puts his heart and his time at the service of these cheeses.
