What if we rediscovered the taste of pistachio from Provence? This culture has totally disappeared from France for a century. The pistachios we eat come mainly from the United States or Spain. But farmers in Vaucluse have decided to reintroduce this Mediterranean shrub, which does not require much water.

Fabien Fiorito is a producer of truffles in the Luberon and two years ago, he decided to diversify. By reclaiming the land from his grandparents, he decided to start growing pistachios. Like him, a handful of farmers in the south of France have tried to embark on the adventure, tempted by this tree which does not fear global warming. “It adapts very well to the Mediterranean climate“, explains Fabien Fiorito.
