All day, Joakim Dangelco-director of the association Sikleroams the streets of Strasbourg (Bas-Rhin). With his cargo bike and a good pedal stroke, he collects up to 250 kilos of food waste in his green boxes in a few hours, to make compost. The restaurant “La Corde à clothes” is participating in this operation. Joakim Dangel and its teams collect the establishment’s organic waste. A service billed by the association at 60 euros per month, for one visit per week.

“A lot of food waste has not yet been recovered”

In Strasbourg, the concept has already convinced nearly a hundred restaurants. The idea came from the observation that a lot of food waste was not yet valued. That is to say, when we put them in the black bin, they are sent to incineration, which makes no sense because food waste is 80% of water. This waste can be transformed into a resource“, explains Joakim Dangelwho founded the project. Twice a week, the association also sets up collection points for 400 households in the city center. Mixed with wood chips, food waste is transformed into compost, and becomes a natural fertilizer in a few weeks.
