For me, says Antonio Park, this dish represents the Asian “touski”. Economical and waste-free, since we reuse leftovers of all kinds, it can also be prepared as a family to illustrate the Christmas spirit, and it is absolutely delicious, we promise!

Ingredients
500 g leftover meat
400g uncooked short grain round rice
150g carrots, diced
150 g potatoes in pieces
150 g zucchini, julienned
150 g chopped baby spinach
100g sliced mushrooms
150 g mesclun lettuce, cut into strips
Optional: 150 g of other cooked leftovers (pasta, beans, grains, etc.)
4 eggs
8 c. vegetable oil
2 tbsp. sesame oil
2 tbsp. minced garlic
Salt and pepper
For the chojang-type sauce
2 tbsp. gochujang
1 ½ tsp. tablespoon vinegar of your choice
1 C. tablespoon maple syrup or honey
1 kiwi
1 C. roasted white sesame seeds
½ tsp. lemon juice
Preparation
1. Cut the vegetables in different ways (julienne, cubes, pieces, chopped, etc.) and shred the meats.
2. Fry the vegetables that need to be (potatoes, spinach, mushrooms).
3. Cook the rice in a cooker or, if you don’t have one, in a large saucepan. In the second case, wash the rice 3 to 4 times before immersing it in a large quantity of water. Cover the pot and bring the water to a boil over high heat. When the water boils, lower the temperature and cook over low heat for 50 minutes.
4. Prepare the chojang sauce by pouring all the ingredients that make it up into a blender. Mix until you get a smooth sauce.
5. Cook the eggs fried (mirror). To book.
6. Mix all the vegetables, meats and other hot leftovers with the rice and 4 teaspoons of sauce.
7. Arrange 4 plates of this preparation and top each of them with a fried egg. It’s ready !

The vegetables used in this recipe are indicative. It is possible to choose others that have been cooked the day before or that are fresh, while keeping the same variety and the same proportions. In short, have fun!
