For two years, Loïc Bensoussan, originally from Lyon, has been preparing his pastries based on pink pralines and his beautiful babkas in a hidden workshop in Mile End (that of the equally ghostly Blés de pays bakery).
You must order in advance before Wednesday midnight. This option is still available, but you can now pick up Maison Bonbec sweets at the pop-up store at 5126A, avenue du Parc, which opened a few weeks ago for the holidays.
In addition to the star of the house, the large Rose Bonbec brioche, and other specialties such as praline tart, Savoy cake and babkas, there are a few biscuits, chouquettes, Bressane tarts and, our favourite, the cookie-brownie (brookie). This franken-dessert, which could easily fall to the heart, is perfectly dosed in sugar.
If the customers are there and they insist a little, Bonbec could well decide to have a permanent storefront. Who knows ? Loïc Bensoussan’s pastries are also on sale at Les Minettes gourmet shop in Sainte-Rose.
