The best new Canadian restaurants, according to enRoute

The magazine on the way Air Canada unveiled its long-awaited list of Canada’s best new restaurants on Tuesday.

Two Quebec establishments made it to this prestigious list, dominated by the Toronto restaurant Restaurant 20 Victoria.

Le Mastard, which has a storefront on Bélanger Street in Montreal, ranks second. Chef Simon Mathys’ restaurant is renowned for showcasing Quebec terroir with fresh seasonal ingredients. The journalist responsible for compiling the list, Nancy Matsumoto, declared that her favorite dish of the year came from the Mastard, a slice of ruby ​​red tomato from the Ferme des Quatre-Temps, placed on a bath of camelina, sprinkled with herbs and flowers, and topped with smoked beef fat.

Located in Quebec, the restaurant Alentours ranks tenth. Note that only ingredients from a radius of 150 km enter the tasting menus of chef Tim Moroney. Wine, as well as ethical salt, yeast, milk and cream are exceptions to this rule.

The other establishments that have found a place in this list are, in order, Mimi Chinese (Toronto), Perch (Ottawa), Một Tô (Calgary), Heart’s Tavern and Bar (Kimberley, Ontario), Fonda Balam (Toronto) , Major Tom (Calgary) and Fox & Monocle (North Saanich, British Columbia).

The ten restaurants were selected by journalist Nancy Matsumoto after a month-long trip across Canada during which she dined at more than 30 establishments designated by a group of experts, without ever revealing its identity or its mandate.
