Chocolate is the five senses. It’s not complicated. You are going to look at it, you are going to feel it, you are going to listen to it when you are going to break it, what is called the chocolate clack. You’ll even smell it after breaking it, since the aromas and all its slightly delicate smells and a little bit of chocolate work will develop even more.
Next, Nicolas Crépon advises keeping the chocolate in your mouth. “The idea, quite simply, is to let it melt in your mouth delicately and to let yourself go quietly with your tasting and to appreciate all the aromatic notes that will develop.” And the master chocolatier reminds us: “Use your five senses, please, to taste your chocolate.”
