As a result of the drought, some fruits and vegetables are missing, or do not have the expected flavor. In the Drôme, a restaurateur has chosen to adapt his menu to these exceptional weather conditions.

A blazing sun has been shining for several weeks in the Drôme. In this vegetable garden in Grignan (Drôme), the vegetation is dry and some plants hardly grow anymore. “Where I should have had [jusqu’à] 8 zucchini, well I don’t have any”, laments this gardener. He works with chef Julien Allano and supplies vegetables to his starred restaurant. This year, the harvest is difficult: he was only able to save a third of the tomatoes in his greenhouse. He claims to have “never” known that. “I knew years when tomatoes, I brought them almost until Christmas. And there, now, mid-July…”

A drought to which Julien Allano must also adapt. This restaurateur offers a unique menu, from day to day. He chooses his recipes according to harvests and climatic conditions. “It’s anticipation, it’s creation and then there you go, we adapt, we reinvent ourselves. There are new constraints, we make new recipes, it’s not more complicated than that “he smiles.
