Opening | Bvrger, Christian Ventura’s new address, comes to life

A little over a year ago, Christian Ventura, a restaurant owner well known for his vegan addresses (Momo Sushis, Casa Kaizen, Napolito), signed a commercial lease in the premises that had housed the Marusan for several years. The project: Bvrger, a restaurant that would serve vegan burgers, of course!

Two months later, while it was in full swing, Burger Fiancé opened a few doors away, another concept of vegan burgers. But for the chef, there’s no question of changing his mind: “I really wanted to open a place for burgers, because it’s really one of my favorite dishes! I’m a big fan! »

He has therefore revised his menu to stand out, adding to the classic “beef”, “chicken” or “fish” burgers more elaborate signature creations, with flavors inspired by different culinary cultures: Mamma Mia, Tokyo, K- Town (Korean)… We tasted the very successful Truffle, with its candied and crispy mushrooms and its truffle and black garlic mayo. The meatballs here are made from Impossible brand vegan ground beef or shiitake mushrooms, soy protein, nuts and sweet potatoes. The rest of the menu, which can be eaten on site, in the leafy local with a design signed by Chantal Royer, or to take away, offers fries, a few starters and milkshakes with well-crafted flavors, made from oat milk. : the Yoki Ono with yuzu and vanilla or the Kung Fu Pandan, with pandan, mango and mochi.

There is no doubt that the chef – who also signs the menu for the botanical sushi restaurant Bloom – shows once again that there are no limits to creating delicious dishes, without animal protein. Moreover, absolutely nothing indicates, when entering Bvrger or consulting the menu, that we are here in a vegan restaurant. And many customers see nothing but fire!
