In Monein everyone has known this small artisanal biscuit factory since 1984, its life is not a long calm river for the greatest joy of gourmets. Remi Ortholan was already in the walls before taking over the house. It is his companion Magali Duclos who is in the studio and reveals to us the history and life of the Atelier de l’Ours. Rémi Ortholan is inspired one day, an idea. It is on the phone that he tells us about his somewhat atypical career. He is a pastry chef but he was also a coachbuilder.
