The origins of the County
the French favorite cheese tells its story, which begins in the 11ᵉ century, on the occasion of the appointments of the County. A story fromreal know-how and a faithfully preserved thousand-year-old tradition that is only getting modernized without disappearing.
Comté is a pressed cheese cooked in raw milk, from the Jura Massif. He is one of the first French cheeses to have a AOC – Appellation d’Origine Contrôlée – since 1958 as well as a PDO – Protected designation of origin – since 1996. Today it is produced daily in 140 cheese dairies in Franche-Comté.
Comté production
The production of this cheese requires a large quantity of milk, i.e. 400 liters to obtain a wheel weighing about 40 kg. The milk used to make Comté comes from Montbéliarde, French Simmental and Eastern Pie Rouge breeds. Exclusively fed in the pastures of the AOP zonethey consume grass in summer and hay in winter.
The aromas of Comté vary according to the time of the year in which its milk was produced, its region of production, the know-how of the cheese maker and its ripening period. Its maturation in the cellar lasts 4 months minimum, and can reach up to 24 months or more! The County turns out to be an exceptional cheese thanks to the diversity of factors of production.

From May 5 to 8, 2022, The Rendez-vous du Comté mobilizes the entire sector to offer you four beautiful days of sharing, of discovery punctuated by tastings, hikes, visits to farms, fruit dairies and ripening cellars. From the farmer to the affineur, passing through the fruit dairies and the places of training, it is the whole of the sector that is revealed thanks to those who run it. Its mysterious places finally open their doors for the enjoyment of the whole family!

More than half of the Routes du Comté sites are mobilized through more than 150 events to share together the passion for taste, the terroir and a unique know-how.
