It is in Sainte-Adèle, in an old renovated house, that the establishment has been established since the end of March, open from Wednesday to Sunday. the foodie is not alone in the adventure: his daughter Loïane Hervieux is also involved in the project, as well as the rest of the family.

“The project started last year; my father was in Abitibi, he found the time long with the pandemic and he found this building for sale in Sainte-Adèle. Right away, he told my mother, me and my sisters about his plan to open a café,” she says. The whole family got on board.

Her father, she says, had been thinking about this project for a while and, as the Hervieux family lives near the village of Sainte-Adèle, it was always obvious to him that this is the place he wanted. settle to offer locals a gathering place, close to the community, in the heart of the Laurentians.

Very quickly, Loïane, who has been working in the restaurant industry for a few years, thought of her good friend and chef Sophie Landry, whom she met at the Maestro, a restaurant in Saint-Sauveur. The latter concocted with Marc Hervieux a simple menu, but to match, and obviously gourmet: sliced ​​duck and caramelized onion or avocado toast with soft-boiled egg and candied tomatoes, granola bowl, a selection of sandwiches (lunch, ham and butter, grilled cheese, eggs and Nordic prawns…).

Are there recipes from the books on the menu? Some are inspired by it, including the Bons Vivants chili. The tenor also puts his hand in the dough, assures his daughter: “My father makes the unemployment pudding every morning, he is at
cooks all day, he is passionate! »

The place has been a resounding success since its opening: the first day, 250 coffees (a house blend from Montreal roaster Barista) were served, and the coffee machine hasn’t cooled since!
