Champagne asparagus

The asparagus season is short, so take advantage of it, especially as Champagne asparagus is reputed to be among the best! To start on the differences between the two, you have to know that they do not grow in the same way. The white asparagus retains this color because it grows entirely underground, while the green asparagus is harvested once out of the ground.

There are many ways to cook asparagus. In boiling water, in a pan, in the oven in foil, in a salt crust or in clay. You can even eat it raw, as a carpaccio! Discover the recipes and tips from Julien Raphanel, chef of La grande Georgette in Reims.
