In the heart of Bangkok, Thailand, chef Nooror Somany Steppe prepares one of her signature dishes: Tom yam shrimp soup. A dish served today in all Thai restaurants around the world as it has become so iconic. “It smells like lemongrass, bergamot, galangal and coconut”, explains the chef of the restaurant Blue Elephant. “It’s both tangy, spicy, and a little sweet thanks to the coconut”.
It is a dish whose recipe has never really varied: plants and spices with medicinal properties that Thai farmers used to pick from their gardens. “Lemongrass is good for detoxifying the body, advises Nooror Somany Steppe. Galangal has antiviral and anticancer properties “. But the soul of Tom yam soup is the shrimp. The chef uses beautiful river shrimps. This soup is now so legendary that the Thai government has asked for it to be added to the intangible heritage of humanity.
