A starred chef at La Traite

The restaurant La Traite, located in the Hôtel-Musée Premières Nations, in Wendake, near Quebec, announced this week the arrival of a new executive chef, Marc de Passorio.

With nearly 40 years of experience all over the world, the two-time Michelin-starred chef has also received three Gault & Millau toques during his career, in addition to the Gault & Millau d’or.

After leading renowned restaurants in the south of France, Singapore, Israel, Mauritius and New Zealand, the chef recently moved to Quebec.

Faithful to the restaurant’s mission, he will strive to showcase cuisine inspired by native know-how and terroir, and to showcase the products of hunting, gathering and fishing.

To carry out this new challenge, Mr. de Passorio has been interested since his arrival on Quebec soil in the various Aboriginal nations — particularly the Huron-Wendat nation, owner of the gastronomic establishment —, stayed at Domaine Notcimik, in La Bostonnais, where he was able to talk with elders of the Atikamekw nation to learn more about traditional cooking and harvesting methods and also visited Akua Nature, an Aboriginal business.

La Traite now offers, in addition to an à la carte menu, a table d’hôte formula of three, four or five courses featuring products such as wild boar, sea bass, halibut, char chevalier, forest mushrooms, wild fruits, such as sea buckthorn and myrtle, then boreal infusions.
