Guillaume Sirois, before being Lwazo on his own branch, was above all an agitator, brewer, engine of the Ampli de Québec, the slow cooker of Hubert Lenoir, Alaclair Ensemble and other Lou-Adriane Cassidy. To make the pandemic less indigestible, this jack-of-all-trades has concocted a grub in his own way, in complete freedom. With local mavericks (the last rodeo), Lwazo offered himself an escapade in the little explored country of outlaw country.
