Ingredients
– 6 salmon steaks
500g oyster mushrooms
– spring onions
– 2 cloves garlic
– 1 bunch of parsley
– lamb’s lettuce
– olive oil
– aromatic olive oil
– salt and pepper
Preperation
Wash and cut the stems of the oyster mushrooms, then sauté them in a pan with oil and butter. Add parsley and minced garlic.
Color the salmon steaks then add the spring onions. Finely chop.
Finish cooking in the oven in a suitable dish. Then bake for 5 minutes.
Finally, scald the lamb’s lettuce then mix it with olive oil, salt, pepper and an aromatic ginger and lemongrass oil.
Dressage
In a large plate, place the oyster mushrooms and the salmon steak then surround with the lamb’s lettuce emulsion.
