Tasty and uncompromising salad at LOV

This fall, it’s up to chef Katrine Paradis, known for her brand K for Katrine, to go through the kitchens of LOV to present a signature dish in collaboration with the Montreal brand dedicated to botanical cuisine, officially launched this week. .

The one that aims to offer uncompromising dishes to gourmets with dietary restrictions presents us with a succulent salad with pronounced flavors, but perfectly balanced.

Salad K pour Katrine is therefore dairy and gluten free, and animal product free. A warm blend of cauliflower and grilled maple curry tofu on a turmeric rice, all topped with a creamy lemon, caper and dill vinaigrette, the guest chef’s salad is dressed with skill.

We delight in the cauliflowers, stars of the dish, whose seasoning goes perfectly with the delicate aroma of turmeric which adorns the rice. The curry-maple grilled tofu, which doesn’t take the foreground but offers a nice surprise to the taste buds with every bite, is a neat addition. Just like pumpkin seeds, for more complexity in terms of textures. The creamy vinaigrette, which goes just as well on arugula leaves as it does with rice, cauliflower or grilled shallots, brings the ultimate touch to the dish, gives it all its consistency and delights the taste buds.
