What if Riopelle had painted with aromas? This intriguing question is the name François Chartier has given to the multisensory gastronomic experience he will be offering in collaboration with the ITHQ on November 7.
The creator of the aromatic science of molecular harmonies is a hyper creative. For three years, he has been working on his olfactory experience project in collaboration with the Musée national des beaux-arts de Québec around the emblematic work of the painter, Tribute to Rosa Luxemburg. In doing so, he lifted several rocks… some of which had promising scents. “We did a lot of research, thought of several concepts, including that of synesthesia,” a neurological phenomenon where the senses are associated, he explains. Some people see musical notes in colors… What if we could taste and smell Riopelle’s colors?
For example, it is known that a strong smell of turpentine floated through the studio that Riopelle and Joan Mitchell shared in Verteuil, France, in the 1970s, Chartier says. “We took out the dominant molecules of turpentine; that gives us rosemary, angelica, hops, spruce, fern… which are all green! It’s as if Riopelle had painted aromas…” he exclaims.
From this spark was born the idea of a unique meal, inspired by six fundamental colors in Riopelle’s work, which can be found in particular in Rosabut also other paintings by the painter. “People will be able to follow the aromatic trail inspired by Riopelle’s works. It’s truly an artistic dinner, we have fun with all kinds of sensory experiences!”
The design of the 5-course menu and the choice of wine pairings are made under the direction of François Chartier, in collaboration with ITHQ professors and students, in the kitchen and in the sommelier department. The benefit event for the ITHQ Foundation will welcome a limited number of guests. Tickets have just gone on sale at a cost of $550.
