Inès Gauthier was not only one of the youngest restaurateurs in Quebec when she started out. She has also published three recipe books since her teenage years, including Inès’ burgerswhich contains 50 recipes dedicated to this great classic. Here, she interprets the burger in her own way in a “cowboy” version, with a spicy sauce, candied bacon and fried onions. To devour without moderation!
For four people
Preparation time: 15 minutes (cowboy sauce) + 20 minutes
Cooking time: 35 minutes
Ingredients
For the candy bacon
8 slices of bacon
Black pepper
30 ml (2 tbsp) brown sugar
For the beef patties
600 g (2 cups) fresh ground beef
Salt and pepper
4 slices of Swiss cheese
For the garnish
30 ml (2 tbsp) melted butter
4 hamburger buns
Fried onion rings with paprika (for the recipe, see the book Inès’ burgers)
For the cowboy sauce
60 ml (¼ cup) mayonnaise
15 ml (1 tbsp) barbecue sauce
15 ml (1 tbsp) Dijon mustard
5 ml (1 tsp) smoked paprika
5 ml (1 tsp) onion powder
1 pinch of ground cayenne pepper
2.5 ml (½ tsp) white sugar
1 pinch of fine salt
Preparation
1. In a bowl, place all the ingredients for the cowboy sauce in the order listed. Mix everything together with a spoon.
2. Preheat oven to 375°F (190°C).
3. Line a baking sheet with aluminum foil. Arrange bacon on rack and sprinkle with black pepper, then brown sugar to create a thin layer. Bake for about 25 minutes until brown sugar has melted and bacon is crisp. Let cool for at least 15 minutes.
4. Heat a cast iron plate in the oven or on the barbecue.
5. Shape the ground beef into 4 patties, each weighing about 150g. Place the patties on the cooking surface and season with salt and pepper. After 4 minutes of cooking, turn the patties over and cook until desired doneness.
6. Add the Swiss cheese 1 minute before removing the patties from the heat.
Assembly
1. Using a pastry brush, brush each side of the hamburger buns with melted butter. Toast the buns on the patty pan until lightly browned.
2. Spread the buns with cowboy sauce. Carefully place a patty, then 2 slices of candy bacon, followed by a large handful of paprika-fried onions. Close the burger and enjoy.
